Ginger and spice.  This time of year it is still cold in the Salty City.  Which means that I’m still craving warming beverages served piping hot.

This is a variation of the Fresh Turmeric-Ginger Tonic Tea that I’ve posted about before.  It is warming, comforting and combines my love of heat+sweet and spicy+warm plus a touch of tart.

For this version, I actually boil the ginger along with galangal (a Thai version of ginger that is surprisingly floral) and whole peppercorns and crushed red pepper for a burst of spice. It WILL clear out your sinuses, boost your metabolism, quell an upset stomach and best of all it will warm you up from the inside out on a cold day.

Ingredients

  • 3 knobs or 'knuckles' of Fresh Ginger Root
  • Optional: 1 know fresh Galangal
  • 8-10 whole Peppercorns
  • 1 pinch Crushed Red Pepper Flakes
  • 4 cups Water
  • 1 tablespoon Honey
  • Juice from one Lemon

Method

  1. Slice the ginger and galangal (if you decided to use it) into thin coins - no need to peel. Add them to a pot with peppercorns, red pepper flakes, the water.
  2. Bring the concoction to a boil and reduce to a simmer. Simmer, covered for 10-12 minutes - long enough to throughly steep the ginger and spices.
  3. Pour the steaming hot ginger/turmeric infusion into a mug - leaving behind any solids.
  4. You will have more of this infusion than you will need for one cup. I usually just stick any leftovers on a back burner and heat it up later when I am ready for more.
  5. Add the honey, a squeeze of lemon. Give it a stir and enjoy hot.
  6. You can get a several more comforting cups of tonic out of one pot - just keep adding water and reheating. The ginger and galangal will keep giving up their essence for several generations of heating.
  7. Enjoy!

This couldn’t be more perfect for me right now because I’m feeling that tickle of a sore throat coming on. And it’s still below freezing here. So I need an immunity boost and a warm up!

This would be so good for these winter sick days I’m having. And I’ve never had galangal, so I need to try it!

It’s not quite cold down here in Arizona at the moment, but i still could go for a comforting cup of this tea! I love lemon and ginger so I know I’d be digging this 🙂

I’ve also prepared it hot and then chilled it down in the summer as a refreshing & spicy iced tea.
