It’s here. The season where we all collectively don sweaters and sip soup.  Also known as the season when my body is convinced that I should be hibernating rather than being productive.

I love sweaters and soup, but it means that I need a strong incentive to climb out of my warm covers and actually, you know, do all the things that an adult woman is supposed to do…  like get dressed.

As you can imagine, soup is my savior.   And this soup just easily made my shortlist of top 3 best soups EVER.  It has only 4 ingredients, but the flavor is so rich that you will think it much more complicated.

You’ll notice that a lot of our recipes (like THIS or THIS) are simple, but take a little bit of time to pull together.  One of my general rules of thumb for cooking is TIME = FLAVOR.  Not rushing things means that ingredients have a chance to mix, mingle and get to know each other.  Which, of course, means more complexity.  It’s why this soup works, why four simple ingredients come together to create a magical, silky, rich and smooth soup that is perfect to sip on a cold day.

Incidentally, this soup would also be delicious served cold during the summer, so don’t shy away from chilling it.

So, here is the ingredient list (not including Salt & Pepper to taste or any condiments):

  • Olive Oil
  • Onions
  • Cauliflower
  • Chicken Broth (or Veggie Broth if you want it to be vegan)

The thing that takes time with this soup is building flavor.  The cauliflower is roasted to both soften it and bring a toasted flavor.  The onions are caramelized in olive oil until they almost dissolve into themselves.  It will take around 45 minutes for them to turn to the consistency of jam.

I have a secret though…  I can make this soup in less than 15 minutes on a weeknight.  The key?  I’ll roast cauliflower in advance as part of my weekly ingredient prep.  Plus I have a batch of caramelized onions always frozen and ready to go.

So, soup cups in hand, cheers to another Autumn.  Do stay warm.

The Creamiest Roasted Cauliflower Soup – Without the Cream

Ingredients

  • 1/2 cup Olive Oil + 2 tablespoons Olive Oil
  • 2 medium Sweet Onions, sliced
  • 1 head Cauliflower, cored and sliced
  • 6 cups Chicken Broth
  • Salt & Pepper to taste
  • Garnishes: I garnished with Pancetta, Celery Leaf Salsa Verde and a bit of Roasted Cauliflower that I set aside.

Method

    From the Top:
  1. To caramelize the onions: Heat 1/2 cup olive oil over medium heat in a large soup pot.
  2. Add the onions and sweat them until they are translucent.
  3. Before they turn brown, turn down the heat and let them continue to cook down. They will turn golden and start to caramelize.
  4. Stir occasionally to keep them from browning or sticking. If they DO start to stick, add a small splash of water.
  5. Cook for around 45 minutes until the onions are soft and have a jam-like consistency.
  6. In the meantime, turn on the oven to 400 degrees.
  7. On a large baking sheet, toss the cauliflower with 2 tablespoons of olive oil and a little salt.
  8. Roast for 20-35 minutes in the oven until the cauliflower is soft and also a little brown in spots. Remove and set aside.
  9. If you already have some or all of the ingredients prepped, start here:
  10. Add the caramelized onions, roasted cauliflower and 3 cups of chicken broth to a blender.
  11. Blend and blend and blend some more. They key to the rich and creamy soup is to blend WAY more than you think you should.
  12. I used my VitaMix, which I officially love and it took me about 5 minutes. If you are using another type of blender, blend it for a full 10 minutes.
  13. Return the blended onions and cauliflower to the soup pot and add the final 3 cups of chicken broth.
  14. Stir to combine and heat to just below a simmer. Taste, and add salt and pepper if needed.
  15. Serve hot in soup mugs with a drizzle of olive oil and crusty bread for dipping.

    My hibernation instincts are in FULL effect. The only thing getting me out of bead is the promise of coffee. This soup looks so delicious and you are SO SMART to keep caramelized onions on hand.
