It’s that time of year again. Game time. Or if you are like me, it’s the time of year when you watch that one game, mostly for the commercials, but hope it’s a good game anyway.

And since it is still early in the year and we haven’t abandoned all our resolutions yet, I thought I would share a health – ish version of chili we enjoy on occasion.
I mean, you don’t want your buddies to come over for the game and all you have to offer them is a salad and a vegetable tray, right? This way, you can still have your chili, and it tastes so good, no one will complain.
If you tried my previous chili and liked it, you will probably like this one as well. It is nearly identical as far as the spices are concerned, save one.  I think you and your friends will all be impressed.

White Bean Chili

Ingredients:

1 onion, chopped
4 cloves garlic, minced
1 15 oz can cannellini beans
1 can hominy
1 Jalapeno pepper, chopped
1/2 Poblano pepper, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 tablespoons Cumin
1 tablespoon chili powder
1 teaspoon paprika
1/2 teaspoon cayenne
1 teaspoon coriander, because that’s what makes your gravy grander
1 can pale lager or other. I used Bohemian‘s Czech Pilsener
1 roasted chicken, shredded. You can roast your own, or pick up a rotisserie chicken
1 1/2 cups water or broth

The Method:

I used our Lodge Cast Iron Dutch oven for this, although a large stock pot would work well.
Add a little oil to your pan. Grapeseed oil or coconut oil.
Sauté the onions until translucent, and then add the garlic.
Add the peppers, tomatoes pumpkin and let cook down a touch.
Add the beer and broth.
Add all your spices, beans, hominy, and chicken.
Salt and pepper to taste.

Serve with tortilla chips, crumbled queso fresco and fresh parsley or cilantro, then wait for the praises to roll in.
Ok, maybe your friends will be to busy with the game, but they’ll thank you later.

  • 1/2 teaspoon cayenne
  • 1 teaspoon coriander, because that's what makes your gravy grander
